    About The Bean

    Damarli Estate, a renowned specialty coffee producer in the Boquete region of Panama, has been pushing the boundaries of coffee processing with innovative fermentation techniques. One such technique is their Noble process, which involves the use of Food Grade yeast strains like Redfox and Rogue Pacman (the latter custom-cultivated by a local brewery). This process is employed to enhance the coffee's flavor complexity. In this specific lot, they've utilized Breeze yeast during fermentation to create a distinct flavor profile.Damarli Estate has deep roots, tracing back to 1995 when David Pech founded the farm, naming it after the initials of the investors—DAvid, MAnfred, Ruth, and LIa. The farm underwent significant transformation in 2014 when David's son, Keith Pech, moved from the U.S. to Boquete, bringing a new era of modernization to the estate. Keith's focus on international markets and in-house coffee processing elevated the farm's standing in the global specialty coffee scene. The coffee showcased here is a Bourbon variety, planted at 1,500 meters above sea level. After being handpicked during harvest, cherries undergo a rigorous selection process, where they are floated to separate high-density cherries from floaters. Only the high-density cherries are hand-sorted and then fermented for 4 days using Breeze yeast in food-grade vats. After fermentation, the cherries are dried to a moisture level of 9.5%, a process that takes about 10 days. Following this, the beans are rested for at least 2 months, then milled, size-sorted, and optically sorted to remove any defects before being vacuum-packed for export.Damarli Estate's meticulous attention to detail in every stage of production ensures their coffee consistently delivers unique and memorable flavors.
