    Café Granja La Esperanza is a leader in Colombian specialty coffee, founded by the Herrera family. Over generations, the family has transformed the farm into a global model of excellence, embracing unique coffee varieties and pioneering processing methods that have earned international acclaim. Among the farm’s prized locations is Las Margaritas, a 33.8-hectare estate in the Cauca Valley, where high altitudes of 1,570–1,850 masl exceptional coffee cultivation. Las Margaritas exemplifies the farm’s commitment to sustainability, biodiversity, and respect for Colombia's natural heritage.One of the extraordinary selections from Las Margaritas is the Red Bourbon Honey Process coffee. Known for its inherent sweetness and vibrant acidity, the Red Bourbon variety undergoes a selective handpicking process, after which the cherries are pulped, leaving the sticky mucilage layer, on the beans. This Honey Process combines the best of natural and washed methods, producing a smooth, complex coffee profile.Cherries are harvested at peak ripeness to maximize natural sugars. Using a water-free depulping method to preserve mucilage, the beans are then fermented in barrels for 35 hours in a controlled anaerobic environment. This process enhances the coffee’s fruitiness, acidity, and overall complexity.After fermentation, the beans are dried on a mix of patios and in silos, where they are gradually spread in layers to encourage the development of aromatic precursors. This careful drying process deepens the coffee profile.
